Chicken Parmesan

Step-01

Make the marinade

For The Chicken:
2 large eggs
2 tablespoons minced garlic
2 tablespoons fresh chopped parsley
3 large chicken breasts pounded
Salt & Pepper to taste

Whisk together eggs, garlic, parsley, salt, and pepper in a shallow dish.
Add chicken into the egg, rotating. Cover with plastic wrap and allow to marinate for at least 30 minutes

Step-02

Make the sauce

For The Sauce:
1 tablespoon olive oil
1 large onion diced
3 Garlic Cloves minced
2 cans of tomato sauce
Salt and pepper to taste
2 tablespoons of oregano

Step-03

Fry the chicken at 350 degrees in a cast iron skillet until golden brown

Press the chicken on both sides:
1 cup Panko breadcrumbs
1/2 cup breadcrumbs (Italian or golden)
1/2 cup fresh grated parmesan cheese
1/2 cup olive oil for frying
Heat oil in a large skillet over medium-high heat until hot and shimmering. Fry chicken until golden and crispy, (about 4-5 minutes on each side)

Step-03

Top chicken with provolone and mozzarella & sauce

For The Topping:
1 slice of Provolone on each breast
16 ounces of mozzarella cheese sliced or shredded
1/3 cup fresh shredded parmesan cheese
2 tablespoons fresh chopped basil

Place chicken on a greased tray and top each breast with about 1/2 cup of sauce. Top each chicken breast with 1/2 cup of mozzarella cheese and a slice of provolone cheese. Top with basil. Bake for 25 minutes, or until cheese is bubbling and melted, and the chicken is completely cooked through.
