  • 3 ripe mangos, peeled and diced
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeño pepper, diced (seeds and ribs removed for less heat)
  • 2 tablespoons fresh lime juice
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper, to taste


  1. In a medium-sized mixing bowl, combine the diced mangos, red onion, red bell pepper, and jalapeño pepper.
  2. Add the lime juice, cilantro, and a pinch of salt and pepper to the bowl and toss to combine.
  3. Taste and adjust the seasoning if necessary.
  4. Cover and refrigerate for at least 30 minutes to let the flavors meld together.
  5. Serve chilled as a topping or dip with fish, chicken, pork, shrimp or as a side dish with chips.
  6. Note: You can add diced avocado or pineapple for more variations, or if you want it sweeter you can add honey or agave nectar.
