Pasta Salad
A great summer dish that you can enjoy all week and tastes better over the 5-7 days you store it in the fridge.
Pasta salad
- 1 pound of rotini pasta or any other pasta you would like to use
- 1 bell pepper
- 1 zucchini
- 1 cup of cherry tomatoes
- 1/2 onion
- 1/2 cup of pepperochini
- 1 cup of mixed olives
- 1 cup of mozzarella balls, halved
- 1/3 cup of parsley or basil
- 1/2 cup of parmesan
Dressing
- 1/2 cup of olive oil
- 1/3 cup of red wine vinegar
- 1 teaspoon of oregano, salt and pepper
- 3 tablespoons of pepperochini juice
Serve with
- Hamburgers
- hotdogs
