Pasta Salad

A great summer dish that you can enjoy all week and tastes better over the 5-7 days you store it in the fridge.

Pasta salad 

  • 1 pound of rotini pasta or any other pasta you would like to use
  • 1 bell pepper
  • 1 zucchini
  • 1 cup of cherry tomatoes
  • 1/2 onion
  • 1/2 cup of pepperochini
  • 1 cup of mixed olives
  • 1 cup of mozzarella balls, halved
  • 1/3 cup of parsley or basil
  • 1/2 cup of parmesan

 

Dressing

  • 1/2 cup of olive oil
  • 1/3 cup of red wine vinegar
  • 1 teaspoon of oregano, salt and pepper
  • 3 tablespoons of pepperochini juice

Serve with

  • Hamburgers 
  • hotdogs
